Nàdair will welcome Robert Sinskey, founder of Robert Sinskey Vineyards, for an exclusive wine dinner at 6 p.m. on Wednesday, Oct. 8, 2025. The evening features a five-course menu designed to highlight wines hand-selected by Michelin Award–winning sommelier Ashleigh McFadden.
Guests will enjoy dishes such as halibut crudo with citrus and almonds, crab with apple and fennel, poultry with potatoes and mole Colorado, lamb with farro and an apple upside-down cake with caramel and honey ice cream. Each course will be paired with one of Sinskey’s acclaimed wines, including the 2019 Sonoma Vineyard Abraxas, 2018 Pinot Blanc, 2018 Carneros Pinot Noir, 2018 Napa Cabernet Franc and a late harvest muscat.
Tickets are $225 per person and can be ordered online. Note that the menu may vary slightly depending on seasonal offerings from local farmers, ranchers and fishermen.
